Sweet Potato Pound Cake

Ingredients

1 cu -butter, softened

1 cu -granulated sugar

1 cu -light brown sugar, packed

4 -large eggs

2 cups -sweet potatoes, cooked and mashed

3 cups -all-purpose flour

1 teaspoo -baking powder

1/2 teaspoo -baking soda

1/2 teaspoo -salt

1 tablespoo -ground cinnamon

1 teaspoo -ground nutmeg

1/3 cu -buttermilk

1 1/2 cups -pecans or walnuts, coarsely chopped

1 cu -powered sugar, sifted

5 teaspoons -orange juice, strained

Preheat oven to 350 F. Grease and flour a 12 cup bundt pan or 9 inch tube pan.

Cream butter with the sugars. Beat in the eggs, one at a time. Add vanilla and sweet potatoes; beat until well blended.

In another bowl, combine the flour, baking powder, baking soda, salt and spices. Stir into the batter, alternating with the buttermilk until well blended.

Fold in the chopped nuts. Spoon the batter into the prepared cake pan.

Bake about 1 hour or until a knife inserted in the center comes out clean. Cool in the pan on a rack for 20 minutes, then invert onto a serving plate.

For the glaze: In a small bowl, combine powdered sugar with 3-5 teaspoons of orange juice until it reaches a drizzling consistency. Using a toothpick, poke holes in the top and on the sides of the cake. Spoon the glaze evenly over the cake, using it all.

Pizza pops!

To make the pizza pops ,use recipe below ,and when baked ,pull apart and place each piece on a lollipop stick in the center! great appetizer! (serve with your choice of dipping sauce)

My favorite is the garlic butter dipping sauce (Recipe HERE)

Homemade pizza crust .or from the can in the dairy section
mozzarella cheese, about 20 cubed pieces
sliced pepperoni

For topping:
olive oil
Italian seasoning
grated Parmesan cheese

Preheat the oven to 400?F. Lightly grease a 9-inch pie plate or cake pan. Divide the pizza dough into roughly 20 equal sized pieces. Take one of the dough pieces and press in a cube of cheese and two slices of pepperoni. Pull the edges of the dough down around the filling and seal. Place in the pan, seam side down. Repeat with remaining dough. Each piece of dough should be touching each other in the pan.

Lightly brush the tops of the dough with olive oil. Sprinkle on Italian seasoning and Parmesan cheese. Bake for 20 minutes or until golden brown. Serve warm or at room temperature, with dipping sauce if desired.

Easy Garlic Butter Dipping sauce

1/8-1/4 cup margarine
1/2 tablespoon garlic powder
1/4 teaspoon salt

Directions:

Melt butter in the microwave for about 30 seconds.

Add salt and garlic powder (to taste).

Microwave for 5 seconds longer.

BREAKFAST CUPCAKES

1 -20 ounce package pre-shredded hash brown-style potatoes
2 large eggs, lightly beaten
4 tablespoons flour
1 small sweet onion, coarsely grated
2 thick slices deli ham, chopped into small bits (about 1 cup)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
1 dozen eggs, scrambled*
chives for garnish
Preheat the oven to 400 degrees F., and lightly spray a 12-cup muffin tin with non-stick cooking spray. Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 full. Gently press the potato mixture down in the middle and up the sides of each cup. Bake until golden brown, about 25-30 minutes. If the nests have puffed up too much in the center, scoop out a little with a teaspoon. Spoon a few tablespoons of scramble eggs into each nest and top with chives.

Hot Fudge Peanut Butter Pie Recipe

Ingredients

For the pie:

1 chocolate graham cracker crust
1 cup peanut butter
1 package (8 ounces) cream cheese, room temperature
1 tub (12 ounces) Cool Whip, divided
1 jar (11.75 ounces) hot fudge topping, divided
½ cup sugar

For the topping:
2 tablespoons hot fudge
2 tablespoons peanut butter

Method

• In large bowl, beat peanut butter, cream cheese, and sugar until creamy. Fold in 3 cups Cool Whip. Spoon mixture into crust and smooth to edges.

• Remove 2 tablespoons hot fudge from jar and reserve in zip-loc plastic baggie for later. Heat remaining hot fudge according to package directions. Spread on top of peanut butter layer. Refrigerate pie until serving time.

• At serving time, carefully spread remaining Cool Whip on top of pie.

• Knead hot fudge in baggie with hands; cut tiny hole in corner of baggie and pipe over pie. Repeat with 2 tablespoons peanut butter and pipe on pie in opposite direction.
