Main Course Meatballs

What you will need:

1 10 oz pkg frozen chopped spinach, thawed & squeezed

3 lb lean ground beef

1 med yellow onion, chopped

1 c Parmesan cheese

2 eggs, beaten 

1 Tbsp oregano

1 Tbsp basil

1 Tbsp parsley flakes

2 tsp red pepper flakes

1 tsp coarse ground pepper

2 tsp garlic powder

2 tsp sea salt

Italian bread crumbs

Preheat the oven to 400º.

Mix all ingredients. Squeezing all of it together with your hands.

Make 24 meatballs. It is a little easier if you divide it in half & make 12 w/each half.

Put bread crumbs in a bowl. Roll each meatball in the bread crumbs. Add bread crumbs as needed.

Place the meatball in a muffin pan.

Bake for 30 min. Remove from oven.

These can be served with a marinara sauce, but we like them plain.
You can make these for a party & bake them in mini muffin pans for 15 min. It will make a lot of meatballs, but they freeze well.
