Ezeebuxs/Make -Ahead Breakfast!

Do have have busy mornings at your house? No time for breakfast? Or running thru a drive thru? Or grabbing something quick like a donut? Try this recipe! What I love is you can make this ahead ,and it keeps in the fridge for 3 days or you can freeze them for up to 3 months!YUMMY

Zucchini-Frittatas450

Herb Frittatas

makes 12 and only.26 cents a serving!

What you need:

12 Large eggs

1/2 tsp.salt

1/4 tsp pepper

3 Tbsp olive oil

1 small onion chopped

1 clove garlic,minced

2Tbsp fresh or dried herbs ,such as thyme,rosemary,chives,parsley

1.pre heat oven to 350,coat a 12 C non-stick muffin pan with cooking spray,

2.In a large bowl whisk eggs,salt and pepper till well blended

3.Warm oil in a small skillet ,saute onion until desired softness,add garlic,and saute an additional minute,Remove from heat and cool slightly.

4.Wisk onion and herbs in to eggs,divide among the 12 muffin cups ,bake until set in center,about 25-30 minutes.

Remove from tins as soon as possible to avoid sticking.

You can also use some variations ,such as ham and swiss or spinach ans feta 😉 I like adding zucchini and tomatoes!
