Bacon cooked in the oven is the best .I promise! 350 degrees for about 20 mins on a cookie sheet ,,palce on paper towel to drain.
just watch it for your desired crispness. It come out so crisp! No more fatty gummy spots

Once you crisp that bacon, Pour a little pancake mix lengthwise on the griddle
place your cooked bacon and add more pancake mix to cover! and cook like regular
pancakes delish!
