I absolutely love slow cooker recipes! There is usually little mess and not much fuss putting together dinner with a slow cooker. As a wife, mom and blogger, I usually just don’t have the time to cook. However, I still want a “homemade” meal every chance I get. So, when I saw this recipe for Slow-Cooker Pork Cacciatore I just had to try it. It was originally published in an “allrecipes” magazine I received in the mail. I did make some slight adjustments. Any good cook can always figure out a substitute. I am sure many of you know what I am talking about. You were pretty sure that you had all the ingredients when you went shopping and had forgotten the list at home and never made it back there to retrieve those additional items. Ingredients:
2 tbs olive oil
1 family pack boneless pork chops {approx. 2 lbs}
1 onion, halved lengthwise and thinly sliced crosswise
1 8 ounce pkg fresh sliced mushrooms
1 green bell pepper seeded and cut in strips
1 28 ounce jar pasta sauce
1 diced fire-roasted tomatoes
1/2 cup dry white wine
2tsp chopped jarred garlic
1 tsp Italian seasoning
1/2 tsp dried basil
Shredded Mozzarrella for topping

Here is how to make it:
In a large skillet, heat the oil over medium heat cook onion and bell pepper until they are soft. About 7 mins. Add mushrooms,tomatoes and white wine. Next, add the seasonings. Cook an additional 5 mins. Pour pasta sauce and mixture in slow cooker.Tuck the pork chops in to the entire sauce mixture and cook on low for approximately 8 hours. You know your slow cooker best, that’s why cooking times vary.
